Darren's Delicious but devastating pizza
A Seasons’Greetings, today I will be making a devastating but delicious fat pizza for one.
Now let’s get started!
These are the ingredients you will need:
- 300g strong bread flour
- 1tsp instant yeast [from a sachet or a tub]
- 1 tsp salt
- 100ml passata
- Handful of basil leaves or 1tsp dried basil
- 1 garlic clove, crushed
- 125g ball of mozzarella, sliced
- Big, spicy peppers, chopped
- Chargrilled chicken
- Chilli oil [a lot]
- Diced onions
Firstly, to make the base:
Put the flour into a large bowl, stir in the yeast and salt. Make a well, pour in 200ml warm water and the olive oil. Bring together with a wooden spoon until you have a soft, fairly wet dough. Turn on a lightly floured surface and punch for 5 minutes until smooth. Cover with a tea towel and set aside.
Secondly, how to make the sauce:
Mix the passatta, basil and crushed garlic together, then season to taste. Leave to stand at room temperature while you get on with shaping the base.
Next, roll out the dough. If you have let the dough rise, give it a quick punch, then split into 2 balls. On a floured surface, roll out the dough onto large rounds about 25 cm across, using a rolling pin. The dough needs to be very thin, as it will rise in the oven. Lift the rounds onto two floured baking sheets.
Add the toppings and bake:
Heat the oven to 240C/fan 220C/gas 8. Put another baking sheet or an upturned baking tray in the oven on the top shelf. Smooth the spicy sauce over the base with the back of a spoon. Scatter with beef/chicken/ pepperoni, diced onions and cheese. Drizzle with olive oil and season. Put one pizza, still on its baking sheet, on top of the pre-heated sheet or tray. Bake for 8-10 minutes until crisp. Serve with a little more olive oil/spicy oil and basil leaves if using. Repeat steps for remaining pizza.
Take out your wonderful pizza from the oven. Get pizza cutter and slice it. Put on the jalapenos and extra spicy chilli oil [if you like it hot].
