Marley's Jollof rice
Hello this is Marley.
Today we’re going to make Jollof rice.
I might sound crazy but we’re doing Nigerian style.
There are lot of ingredients, but here is everything you’ll need:
- 10 g scotch bonnets [chillies].
- 100 g basmati rice
- 3 cloves garlic
- 14 ounces chopped tomatoes
- 1 ts. salt
- 10 g ginger
- 2 ts. curry powder
- 3 ts. vegetable stock
- 2 cups water
- 1 ts. thyme [herb]
- 1 tb. bay leaves
- 2 ts. pepper
- 200 g frozen mixed veg.
Now to make the dish:
First, blend tomatoes, chilli, onion, ginger and garlic
Pour into burning, large, deep pan with a lid.
Cover the pan and lower heat from medium to low
After 5 minutes of cooking, add the spices. Don’t forget to keep on stirring
Wash the rice 3 time in a sieve and add to the stew with some more water
Bring the stew to the boil and cover it.
Don’t forget to lower the heat for 20-25 minutes until it evaporates
Last of all, add frozen veg and after 5 minutes it will be yum, yum, yum!
